Christmas shopping!

Wow, it’s December again soon time for shopping of course. I just can’t believe it that the 2007 is almost ending. As if it was just yesterday that we celebrated the 2006 Christmas. Time really fly so quickly. I felt I was just shopping from Christmas last year. I have to get busy in the next few days because this is also the time of the year for our business to get going. I have to shop for my mother-in-laws gifts to our kids too. She didn’t send the balikbayan boxes this year because she was here in the Philippines from August-October. When she went back to the States it’s too late for her to send. Last Christmas she was here with us. The kids had a ball.

Tomorrow I will be decorating my Christmas tree. Usually I do the decorations after the Thanksgiving celebration. I was debating if I should put up my Dickens village. Will see on that, if I have lots of time, I will. My nieces and nephew will help on that too. The hard part for me is putting the Christmas lights. I usually have 3 thousand plus lights on my 8 feet tall tree. Gosh I’m dreading by just thinking about it. I have to work overtime on this though. Oh well, after I’m done I like the feeling seeing the smile on my kids. It’s a joy to me seeing them happy and proud of what I’ve accomplish.

Happy Thanksgiving!

Wow, another year to celebrate Thanksgiving again. Being here in the Philippines for over 7 years now, It’s so good to celebrate it here nowadays. I can pretty much buy everything I need to prepare and cook for Thanksgiving. Unlike when we first move here, being in General Santos at that time it’s hard to get a good turkey. We bought turkey through our neighbor. The turkey is not that good, very tough we just had the native one. Now, practically every mall in Davao has a butterball turkey and the yams and pumpkin.

Today supposed to be the Thanksgiving, but we will celebrate it this coming Saturday. The kids are in school today, so we moved it to Saturday instead so that the kids will have fun, no school the next day too. We invited some of our closest friends here in Davao. I am really excited to prepare and cook for them. Some of them it is their first time to celebrate Thanksgiving because they are from Europe. They are looking forward on it.

I’m going to prepare mash potato, beans, yams, and of course stuffing. I’m baking pumpkin pie. The turkey we like it to be roasted. It’s really yummy when cook like that. I used to bake them in the oven, but when we tried the roasted one we decided to stick with the roasted one instead. We will have 2 turkey since we have some company. I will make lemon meringue pie since one of my son likes it so much. I will post some pictures of our Thanksgiving day celebration here sometime.

Good Dinner!

Yesterday night I had a pleasure to have a friend that cooked for us. He was from the UK. His name is Steve. We knew Steve through John. They both live here in Davao. They were kind enough to come to our house and prepared dinner for us. I was kind of assisting and trying to learn from Steve on his good recipe. My mouth still drooling from it. Honestly all of us pig out that night. Can’t help it though.

Steve prepared a typical Sunday roast, with roasted potato, mushroom stir-fry, steam carrots and broccoli. Of course the yorkshire pudding(not a dessert). It was delicious. I am so proud to say that we made it from scratch. That was the first time that Steve made it himself. Usually in England he will just buy the dough from the store. Since we can’t find it here in the Philippines, I immediately look up the recipe on the internet. Amazingly I found it. I’m going to cook that stuff soon so that I won’t forget to make them. The roast it was so good. Steve rub lots of herb on the roast and put it in the oven for over 3 hours. It took that long because we have a big roast. After I make this stuff I will share some of the recipe here in my blog.

Soon I will be posting what I will cook for Thanksgiving and I will share some recipes too. Anyone that wants to share their recipe feel free to do so.

Chicken salad

I saw this recipe on tv and I tried to cook it.

When we saw it on TV, we thought it looked delicious, that’s why I tried to cook it.

It really turn out good.  That’s why I’m glad I gave it a try!

I let Bob tastes it and he really liked it a lot. Bob’s been trying to eat salad now for a few months during dinner. This one is on our table a lot.

The ingredients are very easy to find, even here in the Philippines, so you can probably find them almost anywhere in the world.

Let’s have a look!

Chicken- with leg and thigh connected
Bacon
Lettuce
Sesame Seed
Ciabata or French Bread
Olive Oil
Dried Rosemary
Parmesan Cheese
Anchovy
Garlic
Cream Cheese
Vinegar
Salt & Pepper

Procedure:
Heat the oven to 450degrees Fahrenheit. Get frying pan that would be good for the oven too, spray non stick oil. Cut the bread(caibata or french) just enough to fit the pan maybe like 3 inches. Arrange it to cover the bottom of the pan. Then spread olive oil on top of the bread and season it with salt and pepper. Get plate put olive oil and lots of rosemary seed then roll the chicken in it. Then put the chicken on top of the bread put some more rosemary and a little salt and pepper. Put in the oven. Bake on the high temperature for 20 minutes. Then turn it down to 350 degrees Fahrenheit for maybe 2 hours or until the chicken turn brown. Then put like 7 strips of bacon on top of the chicken and bake again for maybe another 30 minutes till the bacon became crisps. Then take it out in the oven. Get bowl and crumple the bacon and the bread that turn into croûtons in the bowl then separate the chicken from the bone and put in the bowl. In a separate bowl wash lettuce and cut them to your liking and dry in the spinner. Toast the sesame seeds for a minute or so. After preparing the lettuce and the sesame seeds mix it to the bowl of the chicken.

Dressing:
Mash 1/4 clove of garlic, add one piece anchovy, a tablespoon of cream cheese, 2-3 tbsp. grated parmesan cheese, 2 tbsp vinegar, 6 tbsp extra virgin olive oil and a pinch of salt and pepper. Mix it all together, try to taste first before adding salt the parmesan might be already for your taste. You could also use your favorite dressing.

Our new baby!

A few weeks ago we got a puppy from our friend Klaus and Rosana. Upon seeing at their house prior to getting her, Bob and I always thought that the puppies are really cute. They are very clean too. We really like it a lot. Later as the days goes by when Bob and I went to their house. We really did admired the puppies more and more. So finally one day we decided to surprised our kids, Bob asked me to call up Klaus and Rosana and asked them if they could give us one puppy? Rose then told me that she will ask Mutti( German for mom) if they could give away one puppy. Rose got on the phone again and told me that Mutti said it’s okay because she really like us that’s why shes giving us one. Wow, we were so happy she gave us one.

chichi23.JPGThe kids were really shocked when we brought Chi Chi( that’s our puppies name) home. They really are happy and in love with her. She just roam around our yard and following our other dog Fluffy. They are cute together. We think that Fluffy is a bit jealous of Chi Chi since everybody pay close more attention on the little puppy than her. We tried to pet her more now, we don’t want her to feel left out though. We love all our pets. Next time I will feature all our pet here in the house on these blog. Have fun looking at Chi Chi.
